Creamy Beet Salad Recipe
Ever since moving into our new apartment, I’ve been making food on a regular basis!
This is a really good thing because not only do we save A LOT of money from eating out, we are eating better because we’re actually eating real food. NO MORE IHOP IN THIS HOUSE! Haha.
One of the dishes I’ve been making is this super easy creamy beet salad. I got the recipe from my mom-in-law. She made this for dinner back when we lived at her house and I’ve been obsessed ever since so I asked her how to make it! It’s soooo freaking yummy and it ends up color pink! YEY!!
CREAMY BEET SALAD
When I started posted about this on my Instagram, a bunch of my hispanic friends asked me how I made my potato salad. Then I told them, it’s actually beet salad! But then they said, yeah, that’s the hispanic potato salad! 😂 Tell me, if you’re hispanic, IS THIS CORRECT? And if it is, what is this salad called in the hispanic community?? Anyway, if you want to learn how to make this salad, keep reading!
WHAT YOU NEED:
1 can sliced beets - the can in the photo below isn’t sliced, but if you want your life to be easier, get the sliced ones!
1 can sliced carrots
1 egg
onion
mayonnaise - the one I LOVE is the Real Mayonnaise from Trader Joe’s because it’s not sweet
salt & pepper
You’re going to be shocked at how easy it is to make this! You ready??
DIRECTIONS:
Boil the egg. When it’s done, cut it up into small squares.
Dice the beets.
Dice the carrots.
Dice the onion
Put ingredients into a bowl.
Add mayonnaise. I just eyeball this part. It depends on how creamy you want the salad to be.
Mix everything.
Add salt & pepper. Again, just eyeball this part.
VOILA! It’s done! Enjoy!!! I sometimes stick this in the fridge before serving because I like it better cold!
So easy huh?
It’s just a little tedious with all the cutting, but it’s actually therapeutic for me so just have fun with it!!! This salad is so yummy so I hope you try this out!
